Recipe Wednesday - Pumpkin Mousse

My Aunt Sue has really got into the spirit of healthy living. She has been coming up with some great recipes for all of your family gatherings over the past few months. Her latest is my new favorite. Low calorie pumpkin Mousse made in just 15 minutes! As someone said this weekend, It taste like pumpkin pie without the crust. This is going to be made a lot around our house as the leaves start to change and fall sets in. It just seems like the perfect fall dessert.

Ingredients:
1-1/2 Cups Cold Fat-Free Milk
1 Package (1 ounce) Sugar-Free Instant Butterscotch Pudding Mix
1/2 Cup Canned Pumpkin
1/2 Teaspoon Ground Cinnamon
1/4 Teaspoon Ground Ginger
1/4 Teaspoon Ground Allspice
1 Cup Fat-Free Whipped Topping, Divided

Directions:


1. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set.

2. Combine the pumpkin, cinnamon, ginger and allspice; fold into pudding.

3. Fold in 1/2 cup whipped topping.

4. Transfeer to individual serving sishes. Refregerate until serving. Garnish with remaning whipped topping.
